We can prep the couscous, lamb meatballs and authentic tzatziki and eat these bowls for quick lunches all week! Best part, the Greek tzatziki is so good on everything from veggies to couscous, it’s a meal we actually look forward to!
Lemon zest and flat leaf parsley are what really bring out the flavors of this recipe, so don’t skip out on those! My tip for making couscous that is delicious every time is cook the couscous in vegetable or chicken broth. This adds SO much flavor! A little extra salt never hurt anyone either 😉
