Homemade Green Bean Casserole from Scratch

Ingredients
  

  • 4 cups green beans fresh or frozen, trimmed and cut
  • 2 cups baby bella mushrooms sliced
  • 1 medium white onion chopped
  • 2 cups half and half
  • 4 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 3 cloves of garlic minced or pressed
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fried onions like French's

Instructions
 

  • Sauté onions and garlic with butter and half the salt in a skillet over medium heat, until translucent, about 3 minutes.
  • Reduce heat and add flour, half and half and remaining salt, stirring until paste forms.
  • Stir in green beans and mushrooms. Can do this in a large bowl if your pan is not big enough.
  • Transfer to a casserole dish that is well greased.  Bake at 350 degrees, covered, for 40 minutes. Uncover, top with fried onions, bake an additional 10 minutes. Serve hot.

Notes

Casserole can be made ahead, stored in fridge for two days and reheated before serving. 
 
Casserole can also be assembled up to point of baking in oven, stored covered in fridge and baked before serving.
